This pepper is at the heart of all Peruvian cooking. It is also called Aji Yellow. The plant grows up to 6 feet and needs support. It also takes a very long time to ripen which is tricky in this area. It is better if you have a greenhouse or can grow in a pot and bring it in to a sunroom finish ripening.
The pepper itself is quite large 4-6 inches and it’s thick flash is crispy and juicy. The flavour is absolutely amazing fruity and sweet. The heat is above that of a very hot jalapeño. Peruvians often tame the heat by balanching them in hot water a few times. Once blanched you can incorporate their amazing flavour into sauces and dishes that are family friendly.
