- Capsicum annuum)-The Pasilla Oaxaca pepper is related to the other Pasilla types in the State of Oaxaca, Mexico. It ripens from very dark green to brown. The peppers are about 6 inches long and 2 inches in width near the stem. They are used for stuffing and roasting but also smoked dried and used in traditional sauces like mole. Plants grow to about 3 feet. They get pods pretty early but then take along time for those pods to turn brown. Can be used green also as a mild seasoning or stuffing pepper.
