Polaris is  is the only of the 5 True North varieties that is not an oxheart. Polaris is a beefsteak and named after the North Star.

Ripe fruits are deep burgundy in color with a velvety soft core.  Polaris is a vigorous and productive "potato-leaf" variety which is relatively early compared to similar varieties -- producing ripe fruits approximately 75 days after transplant.  Flattened fruits are excellent for use on sandwiches, as they do not have excess jel that will completely soak the bread.
