(Annum) Also known as Isot Pepper and is from the Urfa region of Turkey. It is a very large long red bell type pepper but with thinner flesh. It is commonly left to ripen fully and then goes through a special drying process where is it dried (usually in sun) during the day and then covered to rehydrate “sweat” at night. It then develops a really fruity/ raisiny flavour and turns very deep purple or purplish black.
However, this is a fantastic pepper to dry like you would normally, it makes a nice bright fruity flake similar to Aleppo . Also, it’s a nice big stuffer. Finally , something I discovered last year is that these are so good green!!! They are sweet green and just a little spicy. Add them to your subs or salads for a fresh crunch!!
